Orange Cinnamon Muesli

A friend posted a link to an Orange Cinnamon Granola that she found and I have changed it a bit and Brendon and I really enjoy this Muesli. I tried it out a couple of weeks ago and today made a big batch (triple the original). We are not big on dried fruit in our Muesli - but you could add dried fruit and coconut (when it's cool) if you wanted to.

Mix
9 cuts oats
3 cups chopped nuts
(I used 1 each of cashew, Brazil and walnuts).
2 1/2 cups seeds
(I used 1 cup pumpkin and 1 1/2 cups of our bread mix which is sunflower, sesame and linseeds).

In a pot combine
1 cup freshly squeezed orange juice
The orange zest from the oranges you used
1/2 cup honey
1/2 cup olive oil
1 1/2 tsp cinnamon
Heat gently and let sit for 5 minutes for the flavours to merge.

Pour orange mixture over the oat mixture and stir until well coated.
Spread out in single layer onto a lined baking sheet and bake at 160 for about 25 - 35 minutes or until lightly browned. I stir it occasionally and had to do it in two batches.
Let it cool completely and then store in an airtight container.
Enjoy.
