Buttermilk Rusks


1 1/2 kg self-raising flour
2 cups sugar
2 eggs
500g butter (melted)
500ml buttermilk

Preheat oven at 180C.
Mix all the ingredients.
Knead until the dough comes away clean from the sides of the container.
Roll into balls and place 2 rows in 3 greased loaf pans.
Bake for about 30 minutes or until cooked (probably more like 45min - make sure they are cooked as these ones still had a raw bit in the middle).
Break or cut into required sizes.
Dry on baking sheet at 120C for 3 hours.
Turn oven off and leave in the oven overnight.
