Chocolate spread

I got this recipe from here.
2 cups hazelnuts
Roast at 200 degrees for 6-8 minutes.
This loosens the skins.
Rub with a towel (or with your hands if you let them cool off a bit) so that most of the skins are off.
Place in blender (I have a Vitamix) and blend until you have butter. It first goes a bit like flour (photo on the right) and then the butter forms. A Vitamix works well for this as you can use the tamper to push the nuts down (and it's supa fast).
Then add:
1 1/2 Tbs vanilla extract
1/4 cup cocoa powder
1/4 cup + 2 Tbs xylitol
a pinch of Stevia
Almost 2ml of salt
2 Tbs coconut oil
1/2 cup almond milk

Blend again until nice and smooth.
I was really impressed with the outcome. I ended up making myself a almond milk smoothy in the Vitamix with the butter that was left around the blade and it was lovely.
It's great knowing my children will now be eating a healthy chocolate spread, with no sugar and all the wonderful benefits of the hazelnuts.

I will be trying this, Belinda. My kids love nutella, and my attempts in the past to make it have not been very successful. Paulette.
