Chicken liver pate

I finally got to make more chicken liver pate for Ruth last night. For now I will be giving her this for breakfast (as she only wakes after 8:30 at the moment) and I hope it will help lift her iron levels and give her a bit more energy.

My recipe:
750g liver
150 - 200g butter
3 onions (not too big)
5 garlic cloves
salt
pepper
herbs
mixed spice (I added just a little this time to try it)
orange juice
Cook all the ingredients except the liver and orange juice till soft. Add liver and cook till no longer pink. Allow to cool off a bit before blending to a smooth paste. Allow to cool off a bit more before adding the orange juice (heat will destroy the vit C and the Vit C helps the body absorb the iron). Add enough to make the mixture soft. Remember that when it sets the butter will make it harder. I store it in these little containers in the freezer and just take them out as needed.

1/2 cup butter
1 cup onion
1 large garlic clove
1/4 tsp each of thyme, marjoram, sage, pepper
3/4 tsp slat
1/8 tsp all spice
500g liver
2 tbs orange juice
