Bobotie

Rachel made Bobotie for us tonight and it was sooooo good. I realized I have not shared this recipe yet. And it's a nice traditional South African dish. So here it is.

1 tbs butter or oil
1 large onion
500g mince
2 slices white bread (soaked in milk)
1/3 cup raisins
3 tbs lemon juice
2 tbs chutney (Mrs Ball's chutney is available in NZ at some shops. I make my own - but with NO cayenne pepper.)
1 tsp curry (although I use about 1 tbs - so just test and see how strong you like it. It all depends on your curry. We use a very mild curry that does not burn at all but is just tasty)
black pepper
1 egg

Preheat oven at 160.
Fry onion in margarine till soft.
Add the rest of the ingredients except egg.
Cook for 5 minutes (or till the mince is all browned).
Place in casserole dish.
Mix egg with some milk and pour over the top.
Cook for 2o minutes.

Serve on Yellow rice:
Cook your rice as normal but add the following at the start of cooking:
1/2 tsp Cinnamon
1/2 tsp turmeric
1 tsp salt
4 tbs sugar
1 tbs butter

We normally do a nice big dish and double the recipe.
