I have known for a long time that fresh eggs don't peal well. But what do you do when you only have fresh eggs? I found out. :-)
STEAM the eggs for 20 minutes.
Then put them in ice water to cool off.
They peal so easily. It only took about 10 seconds each.
I had used eggs from this same batch the day before and it was a disaster - it took ages to peal them and I lost so much egg. So I am thrilled that I did some research and found this. So easy.
